VEGETABLE SOUP (Hortosoupa)


INGREDIENTS:

For 6-8 people

METHOD:

  1. Put in a large pot 2 litres of water.
  2. Pour in olive oil and then add all the vegetables.
  3. Boil over high heat until the mixture is cooked.
  4. It may need skimming.
  5. Add salt and pepper, cover the pot and boil patiently for 1 hour and 15 minutes.
  6. If you like sour squeeze into the soup juice of 1 ½ lemon.
