ROAST LAMB WITH POTATOS AND GARLIC

(Arnaki Sto Fourno)


Serves 6-8


INGREDIENTS:





METHOD:

  1. Preheat the oven to 220°C/425°F/Gas 7.
  2. Place the meat in a large roasting pan.
  3. Make several incisions in it and insert one or two sticks of garlic into each one.
  4. Arrange the potatoes and whole garlic cloves around the meat, pour the lemon juice and olive oil over, and add half the water to the dish.
  5. Sprinkle over half the herbs, and some seasoning.
  6. Roast the Iamb for 15 minutes, then reduce the oven temperature to 190°C/375°F/Gas 5. Roast for 1 hour.
  7. Turn the meat over so that the other side browns as well, sprinkle over the rest of the herbs and seasoning, and turn the potatoes over gently.
  8. Add the remaining hot water to the tin and cook for another 25-30 minutes, basting occasionally with the pan juices.
  9. Cover the meat with a clean dishtowel and let it rest for 10 minutes before serving.

The cloves of garlic can be eaten with the meat; they will be deliciously creamy.
