GREEK TZATZIKI (The Traditional)

  

INGREDIENTS:

for 1 large bowl


METHOD:

  1. Wash the cucumbers whole with the peel, cut the edges and  grate from the thick side of a grater.
  2. Lightly season with salt and leave in a colander to strain fluids for about 15 minutes.
  3. Then press by hand to dry completely.
  4. Put the yogurt in a large bowl. Add the  cucumber and mix well.
  5. Mash the garlic in a mortar with a little salt until creamy and put into the yogurt .
  6. Mix well, add the olive oil and vinegar.
  7. Season with salt lightly, add the dill and mint and stir.
  8. Serve in bowls, drizzle with a little oil and decorate with black olives.

GREEK YOGURT



Greeks love to eat yogurt with thyme-scented honey spooned on top as a mid-morning or late-night snack.

Proper Greek yogurt is deliciously thick and creamy and has a lacy crust on top.

The best yogurt i have ever tasted was on Crete, and it is well worth seeking out if you visit the island.

It is one of the simplest pleasures in the world.
