EGGS- MAYONNAISE


INGREDIENTS:

for 6 people

METHOD:

  1. Take the capers and pat dry well with absorbent kitchen paper.
  2. With a very sharp knife cut it into small pieces.
  3. Put into a bowl (keep some whole for decoration).
  4. Put in the same bowl, the finely chopped carrots.
  5. Mix well . Add the mayonnaise.
  6. Mix and  add the tarragon.
  7. Peel  eggs from the shell and cut them in half.
  8. Place them in a plate, one beside the other with the cut side down.
  9. Using a spoon, cover the eggs with mayonnaise mixture.
  10. Decorate with capers and olives and serve.
