DUCK WITH PEAS (Papia me Araka)


SERVES 4 - 6


INGREDIENTS:


METHOD:

  1. Singe and wash the duck.
  2. Cut it into serving pieces and season with salt and pepper.
  3. Heat the butter in a pot and brown the duck with the onion.
  4. Add the tomatoes, peeled and put through a food mill, the sugar and a few table­spoons of water, and let the duck cook slowly for 1 1 /2 - 2 hours.
  5. Shell and wash the peas.
  6. Bring a little salted water to the boil, add the peas and cook until tender.
  7. When the duck is almost done, add the peas and the parsley and continue cooking for a few more minutes.
