The dill plant grows to a height of 8-30 inches. The leaves are feathery and fernlike. The plant is a dark sea green colour, with yellow flowers.
Dill may be found as an ingredient in recipes for pickles, fish, meat, salads, soups, cheese, omelets, vegetables and legumes, as well as a flavouring for olive oil and vinegar.
Dill loses its flavour quickly in cooking and should be added at the last minute.
Delicious in tzatziki, a nice touch in spanakopita, and Greek meatballs often are flavoured with a warm spice (cinnamon) and a cool green herb , either mint or dill.
Poached salmon is lovely with a dill sour cream sauce, and salmon patties (made from leftover salmon or even canned) is perked up with a touch of dill.
Drinking dill tea is recommended for those suffering from insomnia.
