CHRISTMAS HONEY COOKIES

Makes 20

INGREDIENTS:


METHOD:

  1. Mix together the baking soda and orange juice.
  2. Beat the oil and sugar with an electric mixer until blended.
  3. Add the brandy and 1 tsp of the cinnamon, then the orange juice and soda.
  4. Using your hand, gradually work the flour and salt into the mixture.
  5. As soon as it becomes possible to do so, knead it.
  6. Add the orange rind and knead for 10 minutes or until the dough is soft and pliable.
  7. Preheat the oven to 180°C - 350°F - Gas 4.
  8. Flour your hands and pinch off small pieces of the dough.
  9. Shape them into 2 inches long ovals and place on a non stick baking tray.
  10. Using a fork dipped in water, flatten each cookie a little.
  11. Bake for 25 minutes, until golden.
  12. Cool slightly, then transfer to a wire rack to harden.
  13. Meanwhile, make the syrup.
  14. Place the honey, sugar and 1 cup water in a small pan.
  15. Bring gently to the boil, skim, then lower the heat and simmer for 5 minutes.
  16. Immerse the cold melomakarona about six at a time into the hot syrup and leave them for 1-2 minutes.
  17. Lift them out with a slotted spoon and place on a platter in a single layer.
  18. Sprinkle with the walnuts and remaining cinnamon.
