Place the chickpeas in a bowl of water to soak overnight.
The next day put them to boil in a saucepan until soft.
Drain and remove the skins.
Take peeled chickpeas and pass through a food processor then mix the mashed chickpeas with grated onion, chopped parsley and mint, salt and freshly ground pepper and a little flour if the mixture is too loose.
In a dish put flour to prepare the mix for frying.
We take from this mixture small quantities and mould with your hands in small round balls. one by one we roll the balls in flour and deep fry them until golden brown.
With a spoon remove them to a platter that we first place absorbent kitchen paper to absorb excess oil.
