CHICKEN CASSEROLE WITH OLIVES

METHOD:

  1. This is a very simple dish to prepare and cook but with its typical Mediterranean undertones it is also full of flavour.
  2. Often served with French fries or plain boiled rice, but it goes equally well with boiled new potatoes.
  3. Preheat the oven to 180°C/350°F/Gas 4.
  4. Heat the olive oil in a wide flameproof casserole and brown the chicken pieces on both sides.
  5. Lift them out and set them aside.
  6. Add the onions, carrots and celery to the oil remaining in the casserole and saute them for a few minutes until the shallots are glistening.
  7. Stir in the garlic. As soon as it becomes aromatic, return the chicken to the pan and pour the lemon juice over the mixture.
  8. Let it bubble for a few minutes, then add the water and season with salt and pepper.
  9. Cover the casserole and put it in the oven.
  10. Bake for 1 hour, turning the chicken pieces over occasionally.
  11. Remove the casserole from the oven, stir in the parsley and olives, mix well together, then recover the casserole and return it to the oven for about 30 minutes more.
