CARBONARA (Genuine)


 INGREDIENTS:  

 for 5-6 people


METHOD:

  1. In a small pan saute the bacon without oil or butter until crisp.
  2. Remove and keep it on a plate.
  3. Cook the pasta in plenty of salted water.
  4. Once done strain keeping aside one glass  of the stock.
  5. Inside the pot you boiled the spaghetti, add the butter and oil and heat well.
  6. Pour into the pot macaroni and stir  well.
  7. Into a deep bow beat the egg yolks.
  8. Add 6 tablespoons of wine and another 6 tablespoons of the stock.
  9. Stir in the pasta the roasted bacon. Immediately pour the mixture of egg yolks and stir quickly not to cook the eggs, but to create a creamy sauce.
  10. Add grated cheese, stir for the last time and serve.
  11. Sprinkle with freshly ground pepper and a little chopped parsley.
