BOILED LOBSTER (Astakos Vrastos)

SERVES 4-6



INGREDIENTS:

 


METHOD:


  1. Bring plenty of water to boil in a large pot to which the vegetables, bay leaf, vinegar and salt have been added.
  2. As soon as it comes to a boil, put in the lobster, cover the pot and cook until done.
  3. Remove the meat from the lobster, cut it in slices and pour the oil and lemon over it.

Note: If the lobster is still alive, tie its tail to its body.

1-kg. lobster  requires about 30 minutes to cook.

Figure on 10 minutes for each additional kg.

Variation: If the lobster has coral (eggs), you may add these to the oil and lemon dressing.
